Resumen

El propósito de este artículo es analizar trabajos originales y de revisión que han tenido como objeto demostrar la relación entre la dieta, su efecto sobre la incidencia de enfermedad coronaria y sus implicaciones sobre las medidas preventivas a nivel regional. Se analizaron específicamente las relaciones entre niveles de co-lesterol sérico y enfermedad coronaria, dieta y colesterol sérico, y dieta y enfermedad coronaria. Se concluyó que solamente se observan asociaciones fuertes en comparaciones entre comunidades. La falta de consistencia en comparaciones entre individuos de la misma comunidad puede ser debida a variaciones en la medición de variables, debido a las limitaciones de los instrumentos (encuestas, tablas de composición de alimentos, variación en el consumo individual, hábitos alimentarios, etc.), lo cual restringe la generalización de los resultados a nivel regional. La consideración de estas variaciones mediante estudios de cohorte a nivel regional permitirán tomar medidas preventivas más eficaces.

Summary

The purpose of this review is to analize original and review papers dealing with associations between diet and its influence on the incidence of Coronary Heart Diseases, so as its implications on the preventive measures at regional levels. It has been analized relationships between serum cholesterol levels and Coronary Heart Disease, diet and serum cholesterol and diet and Coronary Heart Disease. It is concluded that there have been shown strong relations in comparisons between communities. However, there are not consistent relations when subjects from the same community are compared. This could be due to variations in variable measurements, such as the limitations of the tools used (food survey, food composition tables, individual intake variations, etc.). All these would difficult to extrapolate the results from one region to another. To develop more effective preventive measures there is the need of cohort studies at regional level bearing in mine all that considerations above mentioned.
